Mood: You know that feeling when you go to a café & you’re craving a nice, fresh salad, but you’re also kind of eyeing the soup of the day too? And the sense of euphoria you experience when you learn that the restaurant offers a half-and-half combo meal option, where you can get BOTH the soup AND the salad?! Yes, you know what you I’m talking about. Best feeling ever. Well, that’s exactly what I went through earlier this week. I was busy working away, when my cuckoo clock diligently jumped to life at 1:00 pm & ushered in the golden hour of lunch time. There I was, craving a cup of hot soup with a side of delicious salad, & groaning at the same time, at the thought of how much work that would include. Ah what the heck, “I want what I want”, & so I got to work. I peered into the fridge & saw fresh sprigs of Rosemary & well, of course, I just HAD to use the aromatic herb:) More importantly, I was also absolutely famished, so I vowed to find a quick & easy way of fulfilling my cravings. And thanks to my good friends, Mr. Microwave & Ms. Blender, 10 minutes later, Mission Accomplished. A piping hot cup of Creamy Vegan Rosemary Spinach Soup with a scrumptious side of Rosemary Infused Corn & Quinoa Salad. Fresh. Simple. Steamy. Creamy. Fragrant. Delicious:) The easiest 10 Minute 2-in-1 Combo Microwave Meal ever. Your very own dream lunch, right here at home:) Bon Appétit:)

Time: 10 minutes (+ Quinoa Cooking Time)
Serving Size: 1 person (1 cup Soup + 1 bowl Salad)

Ingredients:
Soup
• 3 cups Chopped Spinach (I used Baby Spinach)
• 2 Garlic Cloves (chopped)
• 1 tsp Fresh Rosemary (chopped)
• 1 tbsp Extra Virgin Olive Oil
• 2/3 cup Full Fat Coconut Milk*
• Seasoning – 1/2 tsp Pepper, 1/2 tsp Chilli Flakes, 1 tsp Dried Herb Mix, 1/2 tsp Salt*
• 1/4 tsp Lemon Juice
Salad
• 1/3 – 1/2 cup Sweet Corn
• 2/3 – 1 cup Cooked Quinoa*
• 1/2 tsp Fresh Rosemary (chopped)
• 1 Garlic Clove (chopped)
• 1/2 tbsp Extra Virgin Olive Oil
• Seasoning – 1/4 tsp Pepper, 1/4 tsp Chilli Flakes, 1/2 tsp Dried Herb Mix, 1/4 tsp Salt
• 1/4 tsp Lemon Juice
Garnish
• Nut-Free Crunchy Vegan Parmesan Cheese (optional)
Method:
Soup
1. Add the spinach, garlic, rosemary & olive oil to a wide microwave-safe dish. Mix in the first round of seasonings – 1/4 tsp Pepper, 1/4 tsp Chilli Flakes, 1/2 tsp Dried Herb Mix, 1/4 tsp Salt – & combine well, using a spoon or your hands. Place the dish in the microwave & cook it on High Cook Mode for 2 1/2 minutes.
2. Transfer the cooked ingredients from the microwave dish to the blender. Add the coconut milk & the second round of seasonings – 1/4 tsp Pepper, 1/4 tsp Chilli Flakes, 1/2 tsp Dried Herb Mix, 1/4 tsp Salt. Blend the ingredients into a smooth & creamy texture. Do a taste test & adjust the seasonings based on your preference:)
3. Pour the soup into a cup/bowl. Squeeze in the lemon juice & stir well. Heat the soup before serving & garnish it with a sprinkle of Nut-Free Crunchy Vegan Parmesan Cheese🙂
Salad
4. Add all the salad ingredients (except the lemon juice) to a wide microwave safe bowl (reuse the same one you used to prepare the soup ingredients!) & mix them well together. Once again, place the dish in the microwave & cook it on High Cook Mode for 2 1/2 minutes.
5. Transfer the salad ingredients to a bowl/plate. Add a splash of lemon juice & mix well. Garnish it with a dash of Nut-Free Crunchy Vegan Parmesan Cheese or some fresh greens. And voila! Your simple home cooked 10-Minute 2-in-1 Combo Meal – Creamy Vegan Rosemary Spinach Soup with a side of Rosemary Infused Corn & Quinoa Salad – is ready to be served:) Enjoy:)
Notes:
* Adjust the Corn-Quinoa ratio based on your appetite:)
* I’ve only tried this recipe with Full Fat Coconut Milk. If you’re experimenting with other plant based milks, then make sure you use a thick vegan milk, so that your soup has a creamy texture:)
* I used the Trader Joe’s 21 Seasoning Salute Dried Herb Mix. It includes a dry mix of Onion, Black Pepper, Cayenne Pepper, Basil, Parsley, Oregano, Thyme, Rosemary, Cumin, Coriander, Lemon, Garlic, etc. You can use a mix of any/all of your favourite herbs/spices:)
