Crispy Baked Cheesy Smoked Paprika Chickpeas | Healthy Vegan Snack | 5 Ingredients

Mood: You know that feeling when you want a crispy crunchy snack, but you don’t want to go down the unhealthy packaged chips route? You know exactly what I’m talking about, don’t you? We’ve all been there, done that! And I have to admit, I’m particularly susceptible to the tempting lure of vegan junk food; so I was determined to come up with a simple way to satisfy these crispy cravings with a healthier homemade alternative! And that’s how this recipe was born:) Crispy YET Healthy? Check! Thanks to the powers of oven baked goodness:) Smoky with a Kick? Check! Thanks to the flavours of Smoked Paprika! And  wait..Cheesy Comfort too? Check! Thanks to the incredible magic that is Nutritional Yeast! The best part? The recipe is super simple & requires just 5 ingredients! These Crispy Baked Vegan Cheesy Smoked Paprika Chickpeas are perfect for a snack on the go, crunchy salad or soup toppers, party snacks to go with drinks (fondly known as Chakhna in Hindi) or just your regular healthy homemade treats for a Friday night:) I hope you enjoy them like I do! Time: 55 minutes (10 Mins Prep Time + 45 Mins Baking Time)

Ingredients:
• 1 tbsp Olive Oil
• 1 Can Boiled Chickpeas (Drained Weight 240g)
• 1 tsp Smoked Paprika Powder
• 1/2 – 1 tsp Sea Salt (to taste)
• 1 tbsp Nutritional Yeast*

Method:
1. First, preheat the oven to 180°C/356°F.

2. Next, drain the chickpeas using a strainer & rinse them well. And did you know that you can actually save the chickpea water (known as Aquafaba) & use it to make this delicious Vegan Chocolate Mousse? Trust me, it’s magical:)

3. Spread the drained/rinsed chickpeas on a soft & absorbent towel/cloth. Wrap the towel around the chickpeas & using your hands, roll the chickpeas back & forth inside the towel, in order to dry them & also to peel off the skins. Keep doing this until the chickpeas are completely dry & most/all of the skins have come. Pick out the skins/throw them out. This step is very important because the drying & skin peeling process is what will help the chickpeas to really crisp up! So spend some time doing this step well:)

4. Next, transfer the dried chickpeas to a baking tray & add the olive oil. Using a spoon or your hands (or both!), combine well so that all the chickpeas are well coated:)

5. Place the baking tray in the oven & bake the chickpeas for 45 minutes at 180°C/356°F. All ovens are different, so keep an eye on the chickpeas to make sure they don’t burn:)

6. Once the chickpeas are done, take them out of the oven & let them cool for 1-2 minutes. Add the sea salt, smoked paprika and nutritional yeast & combine well. Do a taste check (Taste. Tweak. Repeat.) & add more seasoning as required:) Make sure that all the chickpeas are well coated with the delicious savoury goodness:)

7. Transfer the chickpeas to a serving bowl or store in an airtight container. If you plan on storing the chickpeas, then they will stay crispy for approx. 4/5 days (make sure the container really is airtight!). And voila! Your Crispy Baked Vegan Cheesy Smoked Paprika Chickpeas are ready to be served! Happy Eating:)

Notes:
*If you don’t have Nutritional Yeast, you can always skip it! However, the chickpeas won’t have a cheesy flavour (only a smoky one), because Nutritional Yeast is required to create that cheesy goodness:)
